when i tried to start with ./Plex Media Server i have the same issue, ./start.sh is working, but i get errors and the Server doesn't start on the openelec build from 14.09.

I think there is something wrong with your install, delete the Plex Directory and start over. Maybe it works if you don't install in /root. Try /opt.
I can't test it myself cause i try to install Debian on my box, so Openelec is deleted now.
Try this way:
cd /tmp
mkdir plex
cd plex
wget
http://downloads.plexapp.com/plex-media ... 2/plex.tgztar -zxvf plex.tgz
mkdir -p /opt/plex/
mv Application/ /opt/plex
cd /opt/plex/Application
./start.sh
